Baby Gingerbread Recipe

DESCRIPTION
Healthy gingerbread man cookies perfect for babies and toddlers as they have no added sugar or honey. A great finger food or healthy snack for on the go. They are suitable for babies from 7 months plus.
INGREDIENTS
5 tbsp water *
100g unsalted butter
85g pitted dates, soaked & mashed**
1.5 tbsp ground ginger
1 tbsp cinnamon
2 tsp vanilla essence
1/2 tsp bicarbonate of soda
200g self raising flour
METHOD
1. Preheat oven to 180C fan..
2. Place the water, butter, dates, spices and vanilla into a deep saucepan. Cook for a few minutes over a medium heat until the butter melts and the dates have completely softened and there are no large lumps.
3. Remove from the heat, add the bicarbonate of soda. The mixture will swell up a little at this point. Leave to cool to room temperature.
4. Once cool, transfer the mixture to a large bowl. Sift in the flour and slowly mix everything together to form a wet and sticky dough. Wrap in clingfilm and place in the fridge to cool for about 1 hour until a little firm.
5. On a well floured work surface, roll out the dough and cut out all your gingerbread men shapes. Place gently on a lined baking tray and bake in the oven for 8-10 minutes until the cookies slightly spring back to the touch and are slightly darker around the edges. Allow to cool completely.

NOTES:
* Use cooled boiled water when making these for babies under 1 year of age.
** To prep the dates: soak the dates in a small amount of boiling water. Leave to soak for about 5 minutes. Drain the water from the dates and then mash them with a fork until a paste has formed.
STORAGE
These will keep well in an airtight container for a number of days but you’ll be lucky if there is any left!
The dough can also be frozen once tightly wrapped in clingfilm.
