Baby Friendly Cashew & Basil Pesto

DESCRIPTION

This pesto is a great snack for babies and toddlers. You could serve it on a plain unsalted rice cake or cracker or on slices of apple. It's absolutely delicious on fish or stirred through mashed potato. It will keep for a few days in the fridge once you put a little layer of oil on top to keep the air from getting at it.


INGREDIENTS

50g cashew nuts

25g fresh basil leaves

1/2 garlic clove, crushed

60ml sunflower oil

1 tbsp lime juice


METHOD

1. Place all the ingredients in a blender and whizz until smooth.


NOTES:
Although whole nuts are a choking hazard and aren't recommend for children under 5, cashew pesto and smooth nut butters are a great way to introduce nuts to your weaning baby. Experts say that eating nut products early in childhood could in fact prevent the development of allergies. Some babies may be in a higher risk bracket for introducing nuts (such as those with personal or family history of asthma or eczema) and parents should seek advice beforehand.
