Slow Cooker Chicken & Cannellini Bean Stew

Serves: 4-6 adults


A hearty, autumnal dinner. The perfect slow cooker chicken stew for busy midweek nights.

This recipe is suitable for your weaning baby from 6 months + . You can whizz, mash or chop the dinner to the required texture relevant to your babies weaning stage. The potatoes, carrots and lovely softly cooked chicken will be perfect for BLW too.

If BLW just be careful with the kale as this could be a choking hazard if it’s not chopped small enough. If only beginning BLW and your baby isn’t very experienced with feeding themselves, remove the kale to begin with when they’re more confident you can give.


INGREDIENTS

1 onion, finely chopped

3 carrots, peeled & cut into 1/2 inch slices

500g skin on new potatoes, quartered

750g boneless & skinless chicken thighs

3 tins cannellini beans, drained & rinsed

700ml low salt chicken stock

2 tbsp freshly chopped rosemary

Rind of Parmesan

2 handfuls kale, roughly chopped

Juice 1/2 lemon


METHOD

  1. Place all in slow cooker (except kale & lemon juice), give a stir and cook on low for 5 hours.

  2. After 5 hours, add the kale and lemon juice and turn the slow cooker to high for 20 mins. Remove the Parmesan rind and serve.
